Healthy Corn Bread Recipe

Jiffy mix is convenient but has white sugar and lots of lard. Here’s my modification I baked today. You can tweak it to your liking, substitute flours (oat or brown rice flours if you don’t want wheat) or sweeteners. Add more honey if you want it sweeter, more yogurt for moister, more baking powder and/or egg white for fluffier, and enjoy!
Healthy Corn Bread Recipe
Preheat oven to 400 degrees.
Ingredients: Dry
2 cups cornmeal
1 cup whole wheat flour
3/4 cup brown sugar
2 teaspoons baking soda
3 teaspoons baking powder
1 teaspoon salt
1 can corn (12 oz vacuum packed), drained
Ingredients: Liquid
1 1/2 cups honey
2 eggs
1/2 cup extra virgin olive oil
1 cup milk of your choice (I used unsweetened vanilla almond milk)
1 1/2 cups lowfat plain yogurt
Blend ingredients. Bake in greased and floured baking dish for 40 minutes until knife or toothpick comes out dry.
